This 100% cooked grape must from Bonini Black — VIVACE — is the youngest expression within Bonini’s traditional barrel system. Produced exclusively from Trebbiano grape must, slowly cooked in open vats and naturally matured in wooden barrel batteries for at least three years, it represents the purest form of mosto cotto.

No wine vinegar. No caramel. No thickeners. Only grape must, time and wood.

This is not balsamic vinegar. It is a traditional cooked grape must condiment with natural sweet-acid balance.
