ACETAIA SERENI
A Family Acetaia in the Hills of Modena
Acetaia Sereni is a family-run producer of traditional balsamic vinegar located in Marano sul Panaro, in the hills of Villabianca near Modena, in the Emilia-Romagna region of Italy. The estate sits at around 300 metres above sea level, surrounded by vineyards, olive groves and forests, in an environment where seasonal temperature changes naturally support the ageing of balsamic vinegar.
The Sereni family has dedicated generations to the production of balsamic vinegar, maintaining the traditional methods that define Aceto Balsamico Tradizionale di Modena DOP and high-quality Balsamic Vinegar of Modena IGP.
Today the estate combines agricultural production, balsamic vinegar ageing cellars, and hospitality experiences that allow visitors to explore the culture and craftsmanship behind authentic balsamic vinegar.
A Family Tradition Across Generations
The origins of Acetaia Sereni date back to the early twentieth century when grandmother Santina began producing balsamic vinegar for family use, carefully following the traditional Modenese method.
Her son Attilio expanded the activity while working as a fruit trader, gradually increasing the number of barrels and developing the family production further. Later, together with his son Pier Luigi Sereni, the activity evolved into a commercial enterprise, eventually bringing Sereni balsamic vinegars to international markets.
Today the fourth generation of the family continues this work, with Umberto and Francesco Sereni involved in hospitality, production quality, and international development of the estate
Vineyards, Terroir and Production
A distinctive element of Acetaia Sereni is its control over the entire production process.
The estate cultivates its own vineyards in the Modena hills, where grapes used for balsamic vinegar are grown before being transformed into cooked grape must, the essential ingredient of traditional balsamic vinegar.
The local environment plays an important role in production. The area benefits from:
• clay-calcareous soils
• hot summers and cold winters
• fresh air currents from the nearby Panaro River
These conditions create a favourable microclimate for the slow maturation of balsamic vinegar.
Ageing in Traditional Barrel Batteries
Once the grape must has fermented, the vinegar begins a long ageing process inside the acetaia.
The product matures in a sequence of wooden barrels made from different woods such as oak, chestnut, mulberry, cherry, acacia, ash and juniper, each contributing specific aromatic nuances to the final vinegar.
Through the traditional method known as “rincalzo”, the vinegar is transferred over time between barrels of decreasing size, allowing gradual concentration and complexity to develop during ageing.
Traditional balsamic vinegar must age for a minimum of twelve years, although some of the most prestigious bottles mature for much longer.
The Estate and Hospitality Experiences
Beyond production, Acetaia Sereni welcomes visitors who wish to experience balsamic vinegar at its place of origin.
Guests can explore the acetaia, learn about the production process from vineyard to barrel, and participate in guided tastings of different balsamic vinegars. These experiences often include meals featuring local cuisine where balsamic vinegar is used in traditional dishes.
The estate also hosts an agriturismo, offering panoramic views of the Modena countryside and allowing visitors to immerse themselves in the culture and gastronomy of the region.
