Organic and Biodynamic Balsamic Vinegar from Modena
Acetaia Guerzoni is a family-run producer of balsamic vinegar located in Concordia sulla Secchia, in the province of Modena in Emilia-Romagna, Italy.
Founded in 1970 by Felice Guerzoni and Iride Bardeschi, the company was among the earliest Italian farms to adopt organic and biodynamic agriculture, a decision made decades before sustainability became widely discussed in food production.
Today the acetaia continues this philosophy, producing Traditional Balsamic Vinegar of Modena DOP, Balsamic Vinegar of Modena IGP, and a range of condiments and vinegars derived from grapes grown on the family farm.
Pioneers of Biodynamic Balsamic Vinegar
Acetaia Guerzoni has long been recognised as a pioneer of biodynamic agriculture in the balsamic vinegar world.
The estate adopted organic and biodynamic farming practices early in its history and later obtained Demeter biodynamic certification, one of the most rigorous international standards for biodynamic agriculture.
This commitment to biodynamic principles means that the vineyards supplying the acetaia are cultivated without synthetic chemicals, following agricultural methods designed to respect natural soil cycles and environmental balance.
Through this approach, Acetaia Guerzoni produces balsamic vinegars that reflect both the traditions of Modena and a strong respect for the land.
From Grapes to Cooked Must
Like all authentic balsamic vinegar, Guerzoni products begin with grape must, the freshly pressed juice of grapes.
The must is slowly cooked to concentrate its natural sugars and aromas before beginning fermentation and ageing. This traditional process transforms the grape must into the dense, complex condiment that defines balsamic vinegar.
The acetaia uses grapes grown on the family estate and surrounding territories, maintaining a close connection between the agricultural land and the final product.
Ageing in Wooden Barrels
After fermentation, the vinegar begins its long ageing journey in wooden barrels.
Inside the acetaia, the vinegar matures slowly in traditional barrel batteries, where it is transferred through a sequence of barrels over time. This gradual process concentrates the vinegar and develops the balance between sweetness, acidity and aromatic complexity that characterises quality balsamic vinegar.
Traditional Balsamic Vinegar of Modena must age for a minimum of twelve years, while some of the most prestigious bottles mature far longer before bottling.
A Family Tradition Continued
Today the acetaia is led by Lorenzo Guerzoni, who continues the work started by his parents and carries forward the family’s dedication to organic and biodynamic agriculture.
Under his leadership, the company continues to expand its production while remaining faithful to the principles that shaped its origins: respect for the land, attention to traditional production methods, and a commitment to quality.
